St Bernards Fruit & Veg Asian Pumpkin Soup

The perfect winter warmer soup that is quick and easy to make!

4kg Pumpkin

1 270ml Coconut Cream

½ cup Fresh Chopped Corriander Leaves

Pepper to taste


Chop pumpkin into pieces approx 2 – 3cm and put into a saucepan.

Add enough water to cover the pumpkin and bring to the boil and simmer until the pumpkin is soft.

Take off the heat, and do not strain, simply use a masher to mash the pumpkin with the water inside the saucepan.

Add the can of coconut cream, stir and add chopped coriander.

Stir in briskly, use an electric mixer if the soup is too lumpy.

You may wish to sprinkle some coriander on the top for a garnish as well.


If you want the pumpkin softer and easier to cut, put large pieces in the microwave for 5-8 minutes depending on your microwave!
