Cooking Time – 40 Minutes

1 large garlic clove

¾ tsp salt

3 tbsp soy sauce

3 tbsp hoisin sauce

3 tbsp mild honey

½ tsp sesame oil

Pinch of cayenne pepper

1kg chicken or chicken wings

2 tbsp sesame seeds, lightly toasted

1 shallot, finely chopped

Lemon wedges, to serve

Preheat oven to 220°C. Line a large shallow baking pan with foil and lightly oil foil.

Mince the garlic and mash to a paste with salt using a large heavy knife.

Transfer garlic paste to a large bowl and stir in soy sauce, hoisin, honey, oil, and cayenne. Set aside a quarter of the sauce, to coat the wings once cooked. Use remainder to coat wingettes.

Arrange wingettes in 1 layer in the baking pan and roast, turning over once, until cooked through, about 35 minutes.

Transfer wingettes to a large bowl and mix through the reserved sauce. Arrange the chicken on a serving plate and sprinkle with sesame seeds and shallots.

Serve with lemon wedges
